Well good morning! Happy Monday! (Yes, there is such a thing)
As I mentioned earlier this weekend, Friday night was date night (woo!). The ole' husband and I got a much needed break from being grown ups and had a night out on the town. Mind you, a "night out on the town" means we were in bed by midnight. We're just crazy these days! Speaking of which, this date night made us realize just how crazy we are getting (aka old). We ate dinner at this swanky creole bar in a casino. Sooo delicious, but the spice in the food made us both kind of sluggish afterwards. My stomach used to be made of steel?! WTF?! We decided a drink and a rest might do us some good, so we retired to a trendy and intimate cigar bar in the casino. I immediately started sneezing from all the cigar smoke so we had to go outside. I'm so cool. Anyway, as we sat on the patio couches, we made quite the pair. My puffy red eyes and runny nose went well with my husband's concerned look of indigestion. Getting old sucks...yet it is great at the same time I suppose. Along with a sensitive schnoz, I gained knowledge and maturity and all that fun stuff. Win, win? I'm telling myself that!
Moving on! After such an exciting weekend, healthy food and juice consumption was imperative. My body thanked me for consuming copious amounts of Beet It! juice, avocado toasts, and these ahhh-mazing parsnip fries from Oh She Glows. Seriously, try them. I am no longer afraid of parsnips...parsnips are my bestie!
To start this week off right, and make my comeback from being old and lame at the bar, I took a nice short run this morning followed by some body-weight strength training and stretching. I'm finally in the groove again where it feels good to sweat! After I got home, I was starving. My 2 year old stole my smoothie this morning (he's a spinach smoothie fiend), so I whipped up a perfect bowl of oatmeal instead.
It has just the right amount of savory, sweet, substance, and lightness to make it a great post-workout breakfast. Chock full of protein, vitamins, minerals, and love (aww), this is sure to be a hit with kids and picky husbands alike.
Monday Morning Comeback Oatmeal Bowl
*Makes one single serving of oatmeal, about 1 heaping cup
1/2 cup whole grain rolled oats (gluten free if desired)
3/4 cup almond milk, I used unsweetened vanilla
2 tbsp almond butter
1 tbsp coconut sugar
1 tsp hemp seeds
1/2 cup fresh bluberries
To make: Microwave the oats and almond milk in a microwave safe bowl for 1 min, 30 secs. Stir, heat for an additional 15-30 secs if necessary until oats are cooked and most of the almond milk is absorbed. Stir in almond butter, coconut sugar, hemp seeds, blueberries and spices. When I say a dash, I mean a dash. I "dashed" the spice jar over the bowl. Also, could be measured as a small pinch. A little goes a long way!
Note: If you are anti-microwave (I am trying to convince myself to give it up!), you can make this oatmeal by heating the almond milk and oats on the stove in a small sauce pan over medium heat, stirring until thickened and cooked. Only takes a few minutes!
Prep: Prepare this breakfast ahead of time by placing all the add-on ingredients in a ziplock baggie, your oats in a ziplock baggie, and milk in a microwave safe tupperware or glass container. When you get to work, pour the oats into the milk, microwave and pour on your baggie of toppings. No excuses when it's already packed and ready for you! =) Feel free to make a few baggies at a time...that way, the only prep you'll do in the morning is pour milk into a container!
