A Healthy Start + Beet It! Juice
Last night I may or may not have made some delicious Cakebread Sauvignon Blanc decisions. So good, so right.... Last night was date night (yea!) and my husband and I had an amazing time eating, drinking, chatting, and not changing diapers. It was just so wonderful (that last part especially). When I got home from our night out I popped a B-12 vitamin and drank a big glass of water, but I was still feeling a little dehydrated and hungry when I woke up this morning (at 9am...no rest for the wicked...or moms).
In these situations, I used to use the "hair of the dog" method where I would have another cocktail and hit up a fast food chain for some grease. I now know that was a poor choice, to say the least. My body needs fluids, vitamins, minerals, and good wholesome chow to feel better! In these circumstances, eating the junk is unfortunately an easy move to make, but it won't make you feel better in the long run. I have found a good start to my day, leads to better choices as the day goes on. If I eat a salt laden, preservative packed breakfast sandwich, I might follow it up with a soda...followed by a greasy lunch...and then a quick candy bar snack...and on, and on, and on. When I start my day right, and make a healthy choice, I'm much more likely to make another healthy one after that, and so on!
Staying on track Tip #1: Make a commitment to a healthy start in your day! I promise, that first meal is an important one, and so is that first choice of the day! I know, I know, it seems so simple. That's because it is! Its common sense, but often so darn hard because life gets in the way. It really does make all the difference though! This week, promise yourself to start your day off right. You can choose a variety of healthy options like green smoothies, juices, or simple breakfasts made with whole grains, healthy fats and veggies!
My breakfast this morning (and one of my quick week-day favs) was Simple Avocado Toasts and Beet It! Juice (recipes for both below). So tasty, so simple, so quick, and they travel well!
Simple Avocado Toasts
*makes 2 avocado toasts
2 slices Ezekiel Sprouted Bread
1 ripe hass avocado
1 tbsp olive oil
salt & pepper, to taste
Thinly sliced cucumbers
To prepare: Thaw the bread slices in a toaster over until just slightly toasted. Cut the avocado in half, remove the pit, and score the flesh with a knife in a checkerboard pattern. Squeeze one half of the avocado flesh onto each slice of toast. Mash with a fork and spread to cover. Drizzle each slice with 1/2 tbsp olive oil, and sprinkle salt and pepper on top to taste. If you want, toss on some optional add-in goodies like cucumbers, tomatoes, or sprouts! Eat and feel satisfied.
See? Easy! Now...I was in need of more than just some simple toast this morning. I followed it up with some delicious juice, made from what was left over in the fridge. It was still super tasty!! Note: Coconut water and cucumbers for hydration...yes please!! =)
Note, there are slices of mango in this photo...but none in the recipe. That is because my toddler ate them all before I could make the juice. Gotta love it! Fruit is nature's candy! =) Feel free to add 1/3 ripe mango into this juice for some added sweetness (after all, that was the initial plan!).
Beet It! Juice
*Makes two 16oz glasses of juice
3 large kale leaves
3 celery stalks
1 beet root, peeled
1 cucumber, peeled
1/2 lemon, unpeeled
1 large orange, peeled (or two small)
*optional: 1/3 mango, sliced
3/4 cup coconut water
To make: Run all fruits and veggies through your juicer. Run the pulp back through the juicer if desired. While the juicer is still running, and all fruits and veggies have been juiced, run the coconut water through the juicer and into your glass. Serve as is, or over ice, enjoy!
My son adored this juice. If you plan to serve it to little ones also, I caution you, beets stain! You've been warned! =)
